Vegetables, Anyone?

Derrick and I are trying to incorporate more vegetables into our diet. Does anyone have any good recipes or ideas that you use in your own home that you'd be willing to share? Also, I'll take any tips you've found that work with getting your kids to eat veggies!

Most of my vegis are totally covered in butter so I don't know if that counts??? We (especially Ruby) eat a lot of zuccinni. I just slice it, rinse it, add butter and cover with wrap and put it in the microwave for a few. It is crazy good! Ruby eats it up! Another good way is add chunks of vegis to your spagetti sauce. Then If you aren't to into them they are in a sauce and add extra texture.

I like sliced, peeled cucumbers with rice vinegar. Kids won't eat it.

We also love that brown rice salad; that's how I get lettuce down my throat. Tanner loves it.

Steamed fresh broccoli with a little salt, sprayed with "I can't believe it's not butter". Kinley will do it, Tanner won't even try.

The chicken feta pasta salad is more vegetables than anything else. Because of the dressings and everything, the kids gobble it without question.

Green beans in teeny bit sauteed butter with red onions and garlic, then some italian dressing. Both my kids inhale, when they won't eat green beans any other way.

Peas, I hide them behind or under a piece of pasta or chicken and hope they don't notice :) Slowly increasing the amount until they are safely down their gullet. Sometimes I get busted and it backfires :) Most of hte time it works. I have to feed them MYSELF, of course. Hiding peas behind a huge pile of mashed potatoes, etc.

My kids won't eat fresh vegetables of any variety for any reason. I'm excited to see other people's ideas! I can use them!

Megan B, one tip that HAS worked for me in getting Cec to eat veggies: frozen peas. They are a total snack to her! I just put a handful of them in a bag or cup and she eats them like candy. (and they melt fast enough, and are small enough, that I'm not afraid she'll choke!)

Veggies...??? What is that? Wish I had some advice. How do I get my kids to eat veggies when I don't eat them myself???

My kids will eat a million baby carrots if there is ranch involved. Holly thinks it's okay to just lick the ranch off and double (triple)-dip, but we have told her she has to bite, or she won't get anymore ranch. :)

My girls (and me, too) also love steamed brocolli. I don't add a thing to it. No butter, no salt, nothing. Just bright green and yummy.

We also love making veggie pizza. There's a really good Pampered Chef recipe called "Three Cheese Garden Pizza" that we make a lot. It has fresh sliced mushrooms, sliced zuchinni, onions, and tomatoes. It calls for the premade pillsbury pizza dough, but I just make my own. It's really yummy.

Also, one cookbook that I own and love is the Pampered Chef "It's Good for You." Every recipe incorporates fresh veggies and herbs. Really good stuff that's really good for you.

Oh, and I just remembered. You know those Portobello Pita pockets that you put in the cookbook? I make those, too, and we throw fresh spinach on top after they've baked and eat it like a flatbread sandwich.

My Kylee will eat anything infront of her - including every veggie you can imagine. My Nick will only eat canned sweet peas, YUCK! My kids do like the chicken pot pie recipe off the back of the Bisquick box. I am all about easy and you can choose whatever frozen or fresh veggies you want to add. I add a lot of peas because I know that is what my kids will eat. Renee

Oh, wow! Every one is a genius when it comes to veggies! I think that I have failed in that department. The boys will go to town on corn and tomatoes, and carrots, but I need to incorporate more greens! I love all of the ideas. Talk about wonderful parents!

I steam broccoli and baby carrots in water/vinegar. I put a little bit of water and vinegar in a pan with the lid on and then I cook until the water is gone. I also put lemon pepper on them because I love seasonings. Usually by that time, the baby carrots are pretty soft but not too soft, and the broccoli is soft to eat to. That way you get all of your nutrients without losing them all in water. We love vinegar (I not huge fan of the tast of butter but I do crave vinegar!)... it gives a kick into foods.

I wish I had some great advice. I am letting Spencer eat an ice cream sandwich for breakfast. Does the pickle on the Wendy's cheese burger count? We need some serious help over here at the Gray house!

I just started using the Zip and Steam bags by ziplock to steam veggies in like 3 minutes in the microwave. This has helped me try and cook with fresh veggies in a new and EASY way. Good luck...

Ya the veggie thing is difficult! I agree with Michelle on the veggie bags, they are super easy and you don't always find the time right away to cut and steam your own.

I love asparagus. My baby eats it pretty well too. I put my fav asparagus in the friends cookbook, under "Dan's Asparagus". Check it out. My baby also loves to dip cucumbers in ranch, and I just had the yummiest zuccini pasta from Pizza Factory. I want to learn to do that!

This has nothing to do with vegetables, but -- I think Brenda's baby will be born on Feb. 21st and yours will be born on Amelia's birthday, March 4th - making them 12 days apart. How's that?

Hi Jen! Found you thru your comment on Wendi's blog! I'm so excited to hear you're opening a restaurant!!!! That's making a dream come true! So jealous. That little Cecily is a big girl now! Can't believe it's been 2 yrs. If you need a memory jog: I lived on Morgan Blvd in the townhouse ward. I'm so glad to have found you so we can keep in touch. I'll definitely be stopping by often. :)

I have a really yummy recipe for fresh green beans. If Cec doesn't like veggies very much, she may not like them. But it's worked really well for getting veggies in my big baby, Ryan. He hates veggies, but loves these. I'll send you the recipe if you're interested. Green beans are pretty much the only veg we eat at almost every meal now.
