Rotten Bananas

Just a quick recipe in case any of you are looking for something to do with your brown bananas but don't want banana bread. This recipe has been in our family cookbook forever. Tell me if I'm wrong, mom, but I think it came from one of my great grandmas or something. (All of the best cakes in the book came from them!)

BANANA CAKE

3/4 C Margarine
1 1/2 C Sugar
1 C mashed bananas
1 t vanilla
1/2 C chopped nuts (optional)
3 unbeaten egg yolks
3 C flour
3 t baking powder
1 1/2 C milk
2 t vinegar
1 t baking soda
3 egg whites, stiffly beaten

Combine margarine, sugar, bananas, and vanilla; beat until fluffy. Add egg yolks. Beat well. Add dry ingredients, milk and vinegar. Fold in egg whites. Bake in greased dripper pan at 350 for appx 40 minutes.

I like to top it with a cream cheese frosting. YUMMY!

That does look yummy. Except, I only make banana bread if I substitute chocolate chips for the nuts...do you think it'd work with the cake? In fact, I think I just about add chocolate chips to every recipe I try....hmmmmmm

Ha, you must've seen my fruit flies from your desk... great tip- I've been trying to figure out a way to add favorite recipies to my blog- a slide show? hmmmm i'll make that my next goal to work on while neglecting laundry and children...

Mmmm banana bread. i haven't made it in a while. I tend to store my overripe bananas in the freezer until I'm ready to make it. Thanks for the recipe.

I think this is a recipe of Grandma White's that she got at some Relief Society thing - or in one of her ward cookbooks, or something like that. It is a great cake; it makes my mouth water to think about it. XOxo

I am in the middle of this delicious looking recipe and realize I don't have a dripper pan! Can I cook this in a regular 9x13 pan?

Yes, 9x13 is great! My mom has always called it a "dripper pan."
